STRAWBERRY COCONUT SALAD


This is a dreamy salad. I don't know if you can even really call it a salad... It's like dessert, really! But I call it a salad so I can eat dessert, too! :) I started making a more simple version of this salad last summer, but it has evolved into this and the last time I served it I got so many compliments that I thought I would share!



In addition to being delicious and dessert-like, this is actually still a very healthy salad. If you use Greek yogurt and the full cup of nuts, you are getting approximately 8-13 grams of protein per serving and 5.5 grams of dietary fiber. Plus, it only has 10 grams of sugar and most of them are natural.

Making the salad is really very simple, but apparently it makes you look very sophisticated. And your kids will think you are just plain awesome! You can thank me later...

This salad can be thrown together in just a couple minutes. All you need to do is slice the strawberries and then just combine everything in a big bowl.


After all the ingredients are combined, just give it a good mix and make sure all the strawberries are coated well.


This salad can serve anywhere from 4-6 people. Obviously if you are serving 8 people, the portion sizes will be a little smaller...


I like to serve this salad in mini bowls so that it doesn't get contaminated by the rest of the meal. I'm a little OCD like that. Plus, it's even more aesthetically pleasing that way.


This is the absolute perfect salad for summer because it is served cold and fresh! I hope you get the chance to try it and love it as much as I do!

Strawberry Coconut Salad

Ingredients:
1 quarte strawberries sliced
1 cup of pecans, almonds, cashews or other nuts (any combination works)
1 cup coconut
1 cup vanilla yogurt (greek is great)
1/2-1 tsp lemon peel
1/2-1 tsp cinnamon

Instructions:
1. Combine everything in a bowl and mix well! Chill before serving.
