COCONUT-LIME WAFFLES WITH STRAWBERRIES


Did you know that National Waffle Day was last Sunday?? I had no idea, but Scott and I did create the most delicious waffles I have ever tasted last weekend... coincidentally! Actually, Scott made the waffles and sliced the strawberries. While I created the creamy Coconut-Lime concoction to go on top!


I love waffles. They are seriously one of my favorite breakfasts. There have been so many times when we've had waffles with ice cream for breakfast... or dinner. Waffles are really an any time of day thing!


You may have seen our Cupcake Wars date night from last week. So much fun... If you haven't seen it, you should check it out! Anyway, if you saw that you will recognize the Coconut-Lime theme because we made Coconut-Lime Cupcakes for the party. We had quite a bit of frosting leftover and I was trying to figure out how to use it when I saw that I also had some whipping cream leftover from another dish.


I love making something new and exciting from leftovers! Same great flavors experienced in a completely different way. My tastebuds were very happy with this combination! And so was this girl!


Since I just used leftover Coconut-Lime Cream Cheese frosting, my recipe here is an estimation. I have made other whipped toppings using the ratio below and they are always delicious. You really can't go wrong with whipping cream and cream cheese...


Coconut-Lime Waffles with Strawberries

Ingredients:
2 cups flour
1/2 cup sugar
2 tsp baking powder
1 tsp salt
1/2 cup oil
2 eggs
2 cups milk
1 tsp vanilla
sliced strawberries
whipped coconut-lime topping
toasted coconut

For the Whipped Coconut-Lime topping:
1-2 cups heavy whipping cream
4 oz cream cheese
1/2 cup powdered sugar
1/2 tsp vanilla
1/4 tsp coconut extract
1 tsp fresh lime juice

Directions:
1. Stir all the dry ingredients for the waffles together in a big bowl. In a separate bowl combine wet ingredients and whisk well. Combine wet and dry ingredients. Stir until just mixed. Don't overmix. Using a waffle iron, make your waffles!

2. While the waffles bake, slice strawberries and toast the coconut on a cookie sheet lined with tin foil in the oven until just starting to brown--broil on low for about 5 minutes. Watch it closely so it doesn't burn.

3. Whip 1-2 cups heaving whipping cream until soft peaks form. I blend mine in the blender for just a couple of minutes to make it light and fluffy. Add the rest of the ingredients to the blender and just pulse for a couple seconds to mix it in. By hand continue to stir until the whipped topping is at a light and creamy consistency.

4. Top your waffles with Whipped Coconut-Lime topping, strawberries and toasted coconut!


After this delicious breakfast, I'm convinced that every day should be National Waffle Day... Wouldn't that be nice??
