CREAMY AVOCADO PASTA


I love avocado!! It is one of my absolute favorite things to eat. Period. Luckily, both of my kids love avocado, too. It was the one of the first real foods that I gave to both of them when they started eating "real people" food. To this day, Owen (16 months) can eat a whole avocado on his own in one sitting! He loves it!

This pasta is a super quick dinner... It can basically be put together in as much time as it takes to cook your pasta noodles... about 15 minutes! 



Quick, easy, healthy and definitely a family favorite! It's easily customizable since you start with plain noodles and add the sauce and toppings. You could easily leave out the Jalepenos if you're not a fan of the heat! Or you could add some grilled chicken to make it a little more filling.


Creamy Avocado Linguine

Ingredients
6-8 oz. pasta
2 large avocados
4 oz cream cheese
1/3 cup chopped onion
1 tbs lime
2 tsp garlic
2 tsp cilantro
1 tsp salt
1/2 tsp pepper
3 roma tomatos
1 Jalepeno, if desired
parmesan cheese

Directions
1. Cook the pasta! While the pasta is cooking, peel and pit the avocado and throw it in the blender. Add the cream cheese, onion, lime, garlic, cilantro, salt and pepper. Blend it good and smooth! Then set it aside.

2. Dice the Roma tomatoes and Jalepeno. Drain the pasta and add a little bit of olive oil to keep the noodles from sticking together.

3. Place the noodles on your dish and top with the creamy avocado sauce, tomatoes and Jalepenos... if desired. Top with parmesan cheese. Stir the pasta and enjoy!
